• 2 carrots peeled and chopped • 2 celery stalks chopped • 2-3 cups shredded chicken (a pre-done roaster chicken minus the skin works great)


• 1 8oz bottle of Red Hot sauce (optional) • ¼ cup flour


• 8oz shredded mozzarella or cheddar cheese (or 4oz of each)


• 1 pint of light cream • One 14 oz can of chicken stock/broth (use 2 or 3 cans for a larger soup)


• ¼ cup butter or marg • 1 small onion


Melt the butter in a stock pot, add celery, carrots and onion. Cook until tender. Add the flour and coat the vegetables. Add the chicken stock and continue stirring until the sauce begins to thicken (around 5 minutes). Add the chicken and light cream and continue stirring to combine the cream. Turn the heat up higher, almost to a boil. Reduce heat again to low/simmer. Add the hot sauce (leave this out or use less if you don’t like it too hot) and cheeses once the mixture is nice and warm. I let it simmer for 5 -10 minutes before serving so the flavors really blend. Serve simply on its own, with blue cheese, or taco chips and celery stalks! This is the easiest and quickest soup I’ve ever made and you will love it! Have fun and enjoy!
