“I’d rather have young guys than guys that have worked in places and come in thinking they can do it, because what happens is you take a day off and the consistency changes.


Ahead of the venue’s first Christmas, a small refurbishment has added extra booths and additional seating space. The menus have also been tweaked. A new lunch menu was introduced, alongside special Christmas menus, which include dishes like maple- glazed pork belly with apple sauce and Butchers haggis bon bons; and the Hogmanay Butchers Banquet, which includes cooked, cured and smoked salmon with lemon capers and brioche. Some of the festive dishes are expected to make it onto the regular dinner menu in the new year. “You have to adapt it and change it about a bit and keep it fresh,” added Peter. “You keep the core things that sell well and add wee things to it. We’ve really expanded the menu since I’ve been here. “We’re doing a lot of good stuff and the customers are appreciating it.”
