Cake has landed It is very rare that a genuinely new concept comes to the table. But that’s exactly what happened when the boffins at Unifine Food & Bake Ingredients came up with a British version of the American Whoopie Cake. Showed on the Unifine stand for the first time at BIE, a genuine Whoopie comprises two moist cakes sandwiched with a filling, then decorated. (see picture). Whoopie pies have been around in the US for several years according to Unifine but it is only very recently that they have been seen in Britain. Unifine Whoopies are filled with delicious flavoured mousse creams in eight varieties and with scope for many more combinations. The Whoopies are prepared using Unifine’s Sumix Soft, water and oil blended on a slow speed with a paddle for 2-3 minutes. Colour can be added to the batter or alternatively, mix Sumix Choco, water, oil and egg in the same way but for 4-5 minutes. The mix is then deposited onto silicone mats and baked at 190°C for 8-10 minutes. They need to be really cool before filling and decorating.
