What’s Cooking in the Kitchen of Kristi Bailey?


Kristi Bailey of Weaverville


is a busy mother of four young children. She enjoys cooking but can sometimes run low on extra time, as you can imagine. “I really love to cook, especially when I have the time and re- sources,” she said. “I like to be creative, changing up recipes by adding new ingredients to them.” Bailey first learned to cook primarily on her own af- ter she was married. Crock-pot meals, chicken dishes and kid- friendly recipes are her favorites to make. Originally from Jefferson City,


Tenn., Bailey grew up in the Le- icester community. She is a 1990 graduate of Erwin High School. She went on to graduate from Western Carolina University in 1994 with her bachelor’s degree in special education. Two years later, she also earned her master’s degree from WCU in behavioral disorders. Bailey worked as a special education teacher in the Asheville area for eight years be- fore coming home full-time to be with her young children. She began home schooling five years ago and continues to. Her hus- band Chad is a purchasing agent for Termo-Fisher. Tey are the proud parents of four children: Hayden (8), Auburn (6), Bren- dan (4) and Ian (2). Tey are active members of North Point Baptist Church, where Bailey serves in the children’s ministry. She is also an assistant director of her home school co-op and


a test administrator for Woodcock Johnson testing. In her free time, she enjoys walking, reading, being outdoors and vegetable gardening. Here are a few of her favorite recipes to share:


Seasoned Green Beans


2 cans green beans 1 beef bouillon cube 1 T worcestershire sauce 1 tsp soy sauce 1 T butter 1 pinch of garlic pepper season- ing


Drain beans. Reserve half of liq-


uid. Dissolve cube in liquid. Place green beans and liquid in pan. Add Worcestershire sauce, soy sauce, butter and seasoning. Simmer for about 15 minutes. Ready to serve.


Baked Chicken with Mushrooms


3-4 chicken breasts 4 T butter (melted) 1/4 tsp garlic pepper 1/2 lb mushroom (sliced) 1/2 c mozzarella cheese


Heat oven to 350º. Combine


butter, garlic, and pepper in bak- ing dish. Add chicken and coat with mixture. Bake one hour cov- ered. Add mushrooms. Cook for 15 more minutes. Add cheese and cook for 5-7 more minutes.


Chicken Parmesan


1 lb chicken 3-4 T mayonnaise 1 jar of Prego spaghetti sauce

Community Easter celebration


Woodfin-based Blue Ridge Vineyard Church


will host a community Easter celebration from 11:30 am to 2:30 pm on April 3 at Lake Louise Park in Weaverville. Tere will be a toddler and el- ementary-age hunt and several eggs will have a spe- cial prize. Grand prize is a Nintendo Wii system. A free hot dog lunch will be served until 1 pm at

will be held at 7 am on April 4 in West Memorial Park. An offering will be received for North Buncombe Sa- maritan Ministries and matched up to $300 by West Funeral Home.


One-day baseball camp North Buncombe High School will host a one-day field-


ing and baserunning camp April 3 for players in grades 1 through 12. North Buncombe head coach Wesley King will direct the program in conjunction with U.S. Baseball Academy. Buttermilk Pie


2 c sugar 2 T flour Dash salt


Mix above and then add:


1 T vanilla ¾ C buttermilk 4 eggs (beat separately) 1 stick butter (softened)


Mix all of this together and


bake at 350º until firm. (@45 minutes)


Parmesan cheese Heat oven to 400º. Mix may-


onnaise and spaghetti sauce in bowl. Place chicken in dish. Pour sauce over chicken. Sprin- kle Parmesan cheese on top of sauce. Cook for 30 minutes.


Mashed Potatoes


4-5 large baking potatoes 1 c milk 3-4 T sour cream ½ bar of cream cheese 1 egg 1 stick of butter
