What’s Cooking in the Kitchen of June Cross?
A long-standing family tra-
dition makes Sundays extra- special for June Cross of Weav- erville. She and her extended family members have shared Sunday lunches together for as long as she can remember. “When I was young, we would eat at my grandparents house in Cedar Hill nearly every Sunday. I love this family tradition and I am so glad that it is still a part of our busy life.” Cross first learned how to
cook when she was young. “I can remember being interested in cooking when I was a little girl,” she recalls. “One of my favorite memories was when my mom taught me how to make homemade biscuits and gravy.” Her mother, Sue Bradburn, and her mother-in-law, Hilda Cross, have both shared many recipes and cooking tips over the years. “My mother-in-law always gar- dened and taught me how to can vegetables years ago.” Cross pre- pares country style foods most often and especially enjoys mak- ing desserts and grilling out. but grew up in the Alexander community. She is a 1981 grad- uate of North Buncombe High School. Following her gradua- tion, she began a 19-year career with Kmart where she worked as a pharmacy technician and department supervisor. She was able to stay at home with her children for over a decade. Cross has worked as a front-end cashier for Walmart for the past year. Husband Doug has owned and operated Dado Inc., a mill- work counters and solid surfaces company, for the past 20 years.
Tey are the proud parents of three children: Tory, Tegan and Tyler. Tey attend Gabriel’s Creek Baptist Church and are also very involved in the North Buncombe Youth Athletic Association. In her free time, Cross enjoys camping, sports and time with her friends and fam- ily. Below are a few of her favorite recipes to prepare:
Easy Chicken Casserole
8-10 chicken tenderloins 1 can cream of chicken soup 1 can cream of mushroom soup 2 c chicken broth ½ stick butter or margarine 1 – 8 oz pkg. Pepperidge Farm stuffing mix
1 T mayonnaise Boil chicken and cut into small
pieces. Melt butter in pan and mix with stuffing mix. Put half of stuff- ing mix in bottom of 9 X 13 cas- serole dish. Place chicken on top of mixture. Mix soups and may- onnaise together. Pour on top of chicken. Put remainder of stuffing mixture on top of soup mixture. Pour chicken broth over stuffing mixture. Bake at 350º for 30 min- utes.
Fried Cabbage
1 medium to large head of cab- bage, chopped
1 onion, chopped 1-2 carrots sliced ½ c olive oil 1/8 c water salt and pepper to taste crushed red pepper to taste (op- tional)
Heat olive oil in pan. Add cab-
bage, carrots and onions. Cook for @ five minutes. Ten add salt, pep- per, garlic, red pepper and water. Stir occasionally and cook for @20 minutes. Keep covered between
stirrings. Chocolate Éclair Dessert
1 box honey graham crackers 1 can milk chocolate icing 2 small boxes of French va- nilla instant pudding
1 – 8 oz Cool Whip Mix pudding according to
box directions. Stir in Cool Whip until completely mixed. Fill bottom of 9 X 13 pan with crackers. Pour half of pudding over crackers. Repeat layers again, ending with crackers. Top with chocolate icing. Re- frigerate until ready to serve.
Grandma’s Cornbread
2 c self-rising cornmeal 2 eggs 1 ½ c milk or buttermilk ¼ c cooking oil 1 pinch of sugar
Heat oven to 450º. Grease
and heat seasoned iron skillet. Combine ingredients and mix well. Pour into hot skillet and bake 20-25 minutes.
Ice Cream Sandwich Cake
1 box ice cream sandwiches 1 bottle caramel ice cream topping
1 – 16 oz Cool Whip Place in bottom of large cake
pan. Squirt caramel ice cream topping on top. Cover with Cool Whip. Layer at least two more times, ending with cara- mel topping. Freeze until ready to serve.
