Further evidence of the importance of this station — pardon me, terminal — restau- rant is the Oyster Bar’s Executive Chef Sandy Ingber. Guardian of the menu for 16 years now, still arriving at the Fulton Fish Market at 4:00 a.m. every day, he is sought out by cooking show hosts and food industry professionals alike for his expertise with oysters. He was also interviewed by Luckin, and spoke fondly of his domain: “We’ve had a lot of personalities eat here,


including “Diamond” Jim Brady and Lillian Russell. It was more of a famous spot come to then, to be seen at, but not a world famous


seafood restaurant. “It changes a little seasonally, but we have a lot of business people that work in the area who come here. We also have a lot of com- muters. This is a train station. People come here to eat, or are on their way out so they have a drink. Depending on the season, we have tourists from all over the world. They come here and they know about us. They’re sea-food starved and they just flock to our restaurant.
