Braised Hawaiian Pork Shoulder
INGREDIENTS
1 tablespoon brown sugar 2 teaspoons red Hawaiian sea salt or kosher salt
2 teaspoons paprika ½ teaspoon ground cumin ½ teaspoon ground coriander ½ teaspoon freshly cracked black pepper
1 ½ pounds pork shoulder or Boston pork butt
3 tablespoons plus 1 tablespoon canola oil
1 onion, chopped 1 (3-inch) piece ginger, sliced 4 cloves garlic, smashed 1 cup pineapple juice 2 cups chicken stock or broth
