Mr. Mangat and Ms. Cobb say they offered 20 slots for the cooking class, and all 20 filled up almost immediately. “We had to turn people away,” Ms. Cobb said.

Chef German Mosquera, executive chef at Ruggles Green in Houston, teaches the students how to prepare a meal specific to the faculty member’s topic using as many organic, plant- based ingredients as possible. Ms. Cobb says Chef Mosquera prepares the menus for the


class, shops for all the ingredients, and donates his time teach- ing the class. “He is amazing,” she said. The fact that his res- taurant also is extremely popular in Houston has added to the students’ enthusiasm for the class, she added. In addition to creating the class, Mr. Mangat and Ms. Cobb


also launched the Choosing Healthy, Eating Fresh (CHEF) or- ganization they hope will keep the class going long after they have graduated. The course is scheduled to be offered again during the fall 2012 semester. CHEF also is looking at establishing community gardens


at Harris County Hospital District clinics around Houston to provide fresh, healthy foods for patients. It also is looking at starting a farmers market at a private clinic in an underserved area of Houston.
