HE Alentejo, north of the Algarve and south of the River Tejo, makes up one third of
Portugal and is an undiscov- ered region of rolling plains of cork, olive and citrus trees, with dramatic hilltop villages crowned by medieval castles. The
coastline' s white-sand
beaches dotted with white- washed villages are reminiscent of the Algarve 40 years ago. Temperatures are hot, but crowds are absent. A foodie and wine-lover' s
delight, the diamond in the Alentejo' s crown is the beauti- ful royal town of Evora, a UNESCO World Heritage Site. The Convento Do Espinheiro,
ideally located for exploring, was a famous monastery, the home of kings and a national monument. Now a five-star luxury hotel and spa, run by Starwood Hotels, it' s set in 20 acres of herb gardens and olive groves and has been restored to reflect the splendour and majesty of the original building.
