Here are the basics for getting started in matching cheese and beer. It is recommended to go from lighter, delicate styles on to the bolder ones.


1. Pilsner with fresh mozzarella/ricotta - young milky, rich fresh cheese with crisp, refreshing pilsner’s bitter and crisp hoppy notes.


Cheeses to look for: local/fresh mozzarella, burrata, ricotta Beers to look for: Pilsner Urquell, Lagunitas Chech style Pils


2. Wheat beer with fresh chevre - young milky, tangy cheese is fun to try with seasonal wheat (white) beer’s refreshing citrus/spice flavors.


Cheeses to look for: any local producer’s chevre, Redwood Hill Farm chevre Beers to look for: Ommegang Brewery Witte, Avery Brewery White Rascal, Weihenstephaner German wheat beer


3. Marzen /Oktoberfest beer with buttery aged cheese - the nutty, caramel notes of the beer go great with the earthy notes of these cheeses.


Cheeses to look for: young gouda, Edam, Meadow Creek Dairy Appalachian tomme Beers to look for: Hacker-Pschorr Oktoberfest, Sam Adams Octoberfest, Flying Dog Dogtoberfest


4. Pilsner and light Belgian-style ale with bries and triple creams - rich, buttery creamy cheeses go well with the delicate fruit notes from light belgian ales and the crisp hoppy notes from pilsners.


Cheeses to look for: St. Andre, brie, Cowgirl Creamery Mt Tam, Delice de Bourgogne Beers to look for: Lagunitas Chech style Pils, Victory Brewery Prima Pils, Pils Urquell
