Penrose Room, The Broadmoor 1 Lake Ave., Colorado Springs 866-381-8432 or 719-577-5773 Colorado’s only AAA Five Diamond restaurant. Chef Bertrand Bouquin, 40, a native of Burgundy, France, began his culinary train- ing there and came to The Broadmoor fi ve years ago. Goal: Exceed expectations. Signature dish: Halibut Poached in Black Olive Oil with fi ngerling potatoes. Most popular: The Colorado Lamb Five Ways tempts the most guests: a rack with pistachio crust, loin with tomato confi t, and roasted leg with petite carrot fricassee.

Signature dish: Ragout of Jumbo Lump Blue Crab with leek fondue and shii- take mushrooms. Most popular: Horsera- dish encrusted Filet Mignon with a morel mushroom cream sauce.


Grouse Mountain Grill 141 Scott Hill Road, Beaver Creek 970-949-0600 Chef David Gutowski, 31, attended the Culinary Institute of America in his native New York, and has worked for a year in this Four Diamond restaurant. Goal: A memorable experience. Signature dish: Coffee- braised short-rib lettuce wraps, with Colorado beef and local coffee. Most popular: Pretzel- Crusted Pork Chops. 
