YOUNGSTERS in Ribble Valley are invited to “get active” over the summer months thanks to a
new sports scheme. Ribble Valley Borough Council has launched its
2007 Kids Get Active booklet, which lists a host of sports, arts and crafts activities being run by the council and its partners during the summer holi

Courses in cricket, tennis, netball, athletics and
football, as well as multi-sports sessions, will take place at venues throughout the borough. There will also be sessions in unusual sports, such
as circus skills, dodgeball and “futsal”, as well as athletics and netball camps. The Platform Gallery in Clitheroe will host craft sessions in making kites, dream-catchers and photograph albums.
□ A SUMMER dance will take place in Chip ping this weekend. The event is being held at the village hall on Sat

BISCUIT BROWNIES WITH RASPBERRY CREAM BY EADIE MANSON
Preparation time: 5 minutes Cooking time: 40 minutes
INGREDIENTS:
• 320g eggs • 400g butter • 200g plain flour • 1 tbsp icing sugar
•420gsugar • 250g dark chocolate • 275g walnuts • 50g raspberries
• 200mls double cream
METHOD: • Melt the butter and chocolate over a bain marie and allow cooling for a couple of minutes.
• Beat eggs and sugar to batter then stir in the melted chocolate and butter.
• Beat together then fold in sieved flour and walnuts.
• Pour into a pre-lined Swiss roll tray. • Bake at 18 0008 5 5. • Meanwhile whip the cream and icing sugar to soft peaks.
• Mash the majority of the raspberries with a fork keeping some aside for a garnish.
• Fold them into the cream. • The brownie is cooked when you can skewer it and it comes out clean.
• Remove from the oven and allow to cool. • Slice the brownie and serve with raspberry cream spooned on the side. • Makes 24 brownies.
