PARENTS turned teachers for one afternoon at St Michael and St John’s Primary School, Clitheroe. Pupils from Years 4 and 5
were taught the significance of Christingles and were then - given the opportunity to make
one. A Christingle is an orange,
which is decorated with a scar let ribbon and pierced with four cocktail sticks containing fruit
and sweets. A candle is placed in the
orange and lit during a special
service. Parents provided all of the
components, and the oranges were donated by Burney’s fruit and vegetable stall on Clitheroe

to food hygiene errors, which could trigger unfortunate food poisoning incidents. To prevent any mishaps always remember to follow the four Cs. 0 Cleaning: always wash your hands
thoroughly before preparing food and after handling raw meat and poultry. You also need to ensure that chopping boards, cook ing surfaces and utensils are kept clean. 0 Cooking: cook poultry and minced
meats thoroughly and make sure they are piping hot all the way through. 0 Chilling: keep foods that require chill
ing in the fridge - do not leave them stand ing around. 0 Cross-contamination: keep raw meat
A VICTORIAN Christmas was enjoyed by children from Class 1 at St Mary’s RC Primary School, at Osbaldeston. They travelled to The Judges,
Lodgings, in Lancaster, to learn how the Victorians celebrated Christmas and popularised many of the traditions we enjoy today.
including sending cards and put ting up the Christmas tree. The children, who wore typical
Victorian dress, also mixed the pudding (making a wish as they did so), made pot purri and cornu copia decorations, and - the high light of the day - met Father Christmas.
Another part of the school’s busy
run-up to Christmas came when the whole school watched a rip roaring performance of “Aladdin”, performed by the West Midlands Children’s Theatre. Our picture shows the Class 1 children who experienced a Victo rian Christmas, (s)
and poultry separate from other foods and prepare them separately to help stop bacte ria spreading. Cover raw meat and poultry and store at the bottom of the fridge. It's important that you don't wash your
turkey before cooking, as washing it could spread bacteria around the kitchen. Rest assured any bacteria on your turkey will be killed during the cooking process. Many of us indulge in rich and luxurious
foods over the festive season but there are ways that you can enjoy a healthy and nutritious day.
pressure is on to get the turkey in the oven - why not try jazzing up your usual breakfast cereal with some festive nuts and fruits such as dried figs, dates, almonds and Brazil nuts. 0 For a special and healthy festive drink
try a “mulled juice” from a cocktail of cran berry, orange and fruits of the forest juices - not only will this get you into the festive spirit but all the fruits will count as one por tion towards your five-a-day. 0 Christmas dinner isn’t the same with
out Brussels sprouts - team them with shal lots and low salt bacon or even chestnuts. 0 Cutting back on salt can help prevent
the risk of high blood pressure, which can lead to heart disease. When it comes to cooking the Christmas meal, instead of adding salt, try using garlic, herbs, lemon and spices to add extra flavour. As for Boxing Day and beyond, what do
we do with those leftovers? Follow the Food Standard's Agency's storage tips for safe Christmas eating. 0 If you are cooking turkey or a joint of
meat for lunch and there are leftovers, remove all the meat from the bone, put in a covered container, leave to cool (for no more than two hours), store in the fridge and use within 48 hours. Or you could freeze the left-over meat and eat within three months. 0 If you are using leftover meat to make
a pie or a curry, only reheat the meat once and ensure it is hot all the way through. 0 Salads and leftover veg should be
stored in the fridge. Do not leave them standing around at room temperature and keep them away from any raw foods to pre vent cross-contamination.
