the qualities of the ultimate dinner party wine; stylish, unique and distinctive, top - quality, memorable, eminently drinkable, giving an interesting talking point. Mak ing an ideal stylish aperitif. New Zealand sauvignon is also the perfect accompani ment to a whole host of wonderful dishes. Kiwi chef supreme Peter Gordon has
created a wmnderful dish “Crab tofu fnt- ters and wasabi tobiko”, which comple ments the sauvignon blanc perfectlv. Peter Gordon is a chef and co-owner of

These fritters are fairly easy to make and the resulting te.xture is incredibly light and delicate - which comes from the use of tofu. from 1-2 day-old bread, a firm sourdough will give the best results) 9 vegetable oil for frying
Method 1. Place the fish and tofu in a food
processor and blitz for 45 seconds, scrap ing the sides after 20 seconds. Add the salt, seasame seeds and chilli flakes and blitz for another five seconds. Tip the mixture into a bowl and add the ginger, spring onions and crab meat, mix well. Place in the fridge and leave for between two hours and up to two days. 2. Divide the mixture into six or eight
