A COMPLETELY new concept as far as fish is concerned has come to Clitheroe in a big way. Just 10 weeks ago the family busi
ness of Fish-House Limited moved from its premises in Barrow in the Ribble Valley, to a spanking new industrial unit on the Link 59 Busi ness Park with the latest state-of- the-art equipment
Managing director John Blanc
has been in the fish business for 30 years and, along with son Dominic and factory manager Daniel Bradley, has created a Fish-House which is in the top five food produc ing companies in the North of Eng land. They still supply their old cus
tomer and new ones, but the main business is restaurants, hotels and wholesalers and hopefully in the future local shops. However since moving to Clitheroe they have secured a contract with a food ser vices company, Total Fish Solutions, which has depots in Chatburn (for merly Fred Lawsons) and in Hud dersfield and supplies outlets all over the country. John has invested half a million
pounds in his new unit with all the latest technology from temperature controlled environments for fresh fish to a new flow-wrapping gas
flash machine which seals full sides of salmon or trout or individual por tions of fish, which extends the shelf life considerably.
Another machine will tray wap
fillets of fish, vacating the air which again extends the shelf life and ensures no drips and no smells, per fect for transporting with other food products. All the labelling and stock control is computerised too. John’s first fish business was in
Solihull started in 1977, he moved to Dunsop Bridge in 1984 and created Heaningbrook Trout Farm which he still runs today. Some of the live trout is used to re-stock rivers in the Hodder Valley while some is sold through Fish-House, ensuring cus tomers can have fresh, home-reared in the Hodder Valley rainbow trout straight from the source. to lobsters, fresh and frozen. Ingredients
(serves eight) ® 21b skinned and boned fresh
haddock fillet ® 1 lb queen scallops (frozen) ® lib jumbo scampi (frozen) ® 8oz. peeled prawns (frozen) ® 12oz. strong Cheddar cheese ® 1 pint basic white sauce ® 3 heaped tbsp chopped flat leaf
parsley ® 2 heaped tbsp chopped chives ® 31b creamed potatoes ® 1 lemon freshly squeezed ® salt and pepper to taste
Method 1. Thaw all shellfish, drain and
towel blot. 2. Cook haddock lightly poached
in milk for five minutes. Flake and place in bottom of a dish size approximately 12 inches x 10 inches x 3 inches. 3. Spread scallops, scampi and-
prawns evenly over fish. Sprinkle chives and parsley, lemon juice salt and pepper. Pour over warm cheese sauce to cover. 4. Cover evenly with previously
creamed potatoes topped off with grated cheese and finely sliced toma toes. 5. Heat in oven until browned on
top. 6. Serve with cooked plum toma
toes.

(£3.99) is produced by the Santa Emiliana winery, which has large vineyard holdings throughout Chile. This wine comes from
the Rapel valley and is made exclusively from the Syrah grape. It is quite a big wine,
rich in berry fruit and with a lovely spicy finish. If you want to splash out a bit more and perhaps

be a little more tradition al, why not a good bottle of Chateauneuf-du-Pape. With a spate of good
vintages in the Southern Rhone, the 2000 Chante Cigale (£11.99) is quite outstanding. These wines can be
made of a combination of any of 13 grape varieties. This wine is mainly Grenache and Syrah. It is plump and ripe
with overtones of damsons and spice. Both wines are perfect with red meat, par ticularly a big, juicy steak. For someone very spe
cial, for whom you really want to push the boat out, we recently purchased a rare old bottling of a very special malt whisky. From a single cask, Old
Malt Cask 26-year-old Macallan is priced at £67.99, but the distillery edition of this whisky is over £180 so it ’s quite a bargain! This is real sipping
whisky. On the nose i t is big,
creamy and honeyed, with late smoke. The palate is chewy,
with dried fruit, tannin, oak and peatiness, and the finish is smoky, with dark chocolate and peat again, with great length. With Father’s Day just
gone, why not start saving now for next year (hint!)
