onion, cut into wedges, 1 red pepper, cut into strips, 4oz baby sweetcom, cut in half, and 1 carrot peeled and cut into thin sticks. Drizzle over 1 tbsp oil and mix together. 2. Place lib lean pork fillet on top.
Mix together 4 tbsp plum sauce, 2 tbsp sweet chilli sauce and 2 tsp soy sauce and drizzle over the pork fil let.
3. Cook in a preheated oven for
20-30 minutes. During the last 10- 15 minutes of cooking add 2oz sugar snap peas, mix through the vegeta bles and cook for remaining time. To eat: Serve the pork fillet cut
into slices with the roasted vegeta bles and crispy rice noodles, or boiled egg noodles.

are situated in the Umpqua Valley, which is significantly warmer and drier than Dundee, so a wider range of grape vari eties are able to be grown. As the owner Earl Jones has leanings towards Spain there are many Spanish styles and grape varieties used. Albarinio and tempranillo feature alongside the mighty smooth syrah, some bal anced and concentrated
malbec, grenache and cabernet franc.
Oz Clarke is an admirer
of the wines from VICK ERS Estate in Idaho, in particular the chardonnay. This is a rich style more like a top notch Burgundy at a fraction of the price. With only five hectares of chardonnay there is not much to go round. For those who want

Wild start to ramblers’ day out, but weather smiles eventually
A GROUP of walkers from Clitheroe Ramblers were met with heavy, wind-driven rain sweeping across Chester Avenue car park when they gathered for their walk last Tuesday. However, by the time they
reached Gisburn it was dry. The walk started near
Wharfe, in Addingham, and went up to Addingham High Moor by way of Small Banks and Addingham Moorside. The lunch stop was in a
small, old quarry, which gave protection from the breeze, but offered extensive views across Wharfedale. The view was soon blotted
out by a heavy shower of rain across the dale, but they had only a little of its edge. The weather soon returned to white clouds and blue sky. The walk continued along the
edge of Rombalds Moor and Ukley Moor, with clear views in all directions. The party
stopped to look at the cup markings on the ancient Noon Stone and again to examine the Swastika Stone. Before moving on, and
inspired no doubt by their sur roundings, the ramblers gave a spirited and harmonious ren dering of Ilkla Moor Baht ’At. The walk continued down
through Ilkley, where a short refreshment halt was taken on the river bank. The walkers then followed
the Dales Way along the Wharfe back to Addingham, with a short but very heavy downpour just as they were too far into the fields to have any shelter. The last stretch of the way
was through the churchyard of Addingham Parish Church, where there was a magnificent display of daffodils to give a final touch to what had been a superb day’s walk.
