HE Fence Gate has: long had a first-class name for good food, but the conception of

the 100-seat Topiary Brasserie has helped enhance its reputation. Bar snacks were a popular

feature of the Fence Gate from the earliest days of Kevin Berkins' time there - indeed, its hot beef sandwiches were welUknown throughout the area. . However, he came to realise

that there was scope to develop the food side of the business and separate it from the public bar. That led to the development of "The Brasserie in the Inn", now The Topiary, which opened in 1998, providing a different style of dining, in a new extension to the side of the Fence Gate. It rapidly became popular. Now, however, the dinning

facilities have been completely transformed with the introduction

of the Topiary, seating 102 and offering Modern-English and International Cuisine and an

Award-Winning-WineSlist. Since then, the brasserie has gone from strength to’strength. It not only draws customers.from the local area, but has a reputation which has extended to.:Monchester and

beyond, bringing customers’down the M65, from which it is easy to-‘

; reach the Fence Gate. Its modern, minimalist yet

comfortable and inviting look helps set the tone, which is carried on through the menu of attractive and well-presented , dishes available to-djners. Topiary, of

course, is the art of-tree and hedge trimming, and well- manicured examples' of the art decorate the brasserie. The look was inspired by

Kevin's wife Michelle, a ■ professional designer and the Topiary has been a tremendous
