sive, like Krug 1988 a t £90 a bottle, which is a prestige champagne. So what about the other styles of cham pagne? If you thought cham pagne was an "occasion” drink for a celebration, then you need to re-think and look
a t the various styles of this sparkling gold. Firstly, the brut non-vin
tage style, with up to 15pm residual sugar per litre is dry. Most champagne houses offer a broad span from very dry to dry, depending on the house. Bollinger is the driest, while Mumm is not so dry. This could also be called multi vintage, as the wines come from a blend (orcuvee) of several vintages and many vineyards. Next, the blanc de blanc,
made from the Chardonnay grape only, and excellent style to drink on its own. Whereas the Blanc de Ncir is made from two of the black- skinned grapes that make up the trio of permitted grapes in champagne-Messrs Pinot Noir and Meuniere; This is definitely a food-friendly wine, the colour is darker and the flavour more intense. Rose champagnes, while
almost always more expen sive that the non-vintage, are often full of soft red currant fruits and very gentle to drink on their own or with strawberries. Vintage champagne is the
produce of a angle year’s har vest and, as such, the condi tions and the quality of the grapes must be excellent to release this type of wine. Often very intense on the nose and a much richer palate and fruit. Serve with goats’ cheese or fish with rich sauces - even roasted g?me works well. The demi-sec, with around
