o^rtht ZARZUELA DE PESCADO (serves six) Ingredients
© 4 cloves garlic, chopped O 4 medium onions, peeled
and chopped 0 4 bulbs fennel, thinly sliced
9 Olive oil 9 2 and l / 21b mixed fish
(tuna, swordfish, squid, monk fish) cut into three inch pieces 9 6-8 tomatoes, skinned seed
ed and chopped © 8oz. chickpeas, soaked ana
cooked® lib . cherry tomatoes 9 2 yellow peppers, seeded
and finely sliced 0 generous pinch of saffron
threads 9 lOfl oz. dry white wine
9 lOfl oz. fish stock 9 juice of two limes 9 salt and pepper ® handful fresh coriander Method
1. Fry th garlic, onions and
fennel in olive oil until softened and translucent (about 20 min
utes). 2. In a large heavy-bottomed
casserole, put a layer of half this mixture, followed by the firmer fish and the tomatoes. Then a I layer of chickpeas and squid, fol lowed by another layer of the onion mixture. Top this with the yellow peppers and the cherry
tomatoes. 3. Meanwhile, mix together
the white wine, fish stock and lime juice and infuse the saffron in the liquid. Pour this liquid over the mixture (it will not cover), season then bring the whole dish very slowly to the
boil. 4. If you have done this slowly
enough, it will be cooked when it reaches boiling point, but test the peppers to see if they are |
soft. 5. A sprinkling of chopped

It was with some interest, then,
that I picked up Alan Shepley’s book featuring an idyllic pastel image of a long boat drifting down a canal — walking books generally fill me with ennui, but this I hoped might prove to be
different.

county's most stimulating circu lar walks around rivers, canals, reservoirs and shorelines. Includ ed in the collection are two jaunts in the Ribble Valley. One takes us to the Ribblesdale Arms, Gis burn, along Stock Beck towards Skipton and then back to the vil- lage. Our guide handles his sub- ject matter well, giving us inter esting nuggets of information, such as the fact that the inn, built in 1635, cost its owner £855. The
second walk begins at the Old Stone House, Mitton, which enjoys a good write-up. The walk described is a pleasant one and I for one shall certainly be giving it; a whirl if I can resist the pull of the Old Stone House’stempting

those non-too serious walkers who, like me, are haunted by
