1. Cut kidneys inhalf, lengthways.

drinking. High in alcohol, a hallmark of this grape variety, the nose is ol peaches and apricots mixed with May blossom. The grapes are a deep yellow and again this shows in the wine which is a mid straw colour. The wine has a grip and bite which leaves a pleasant aftertaste, similar to peach stones. A very good summer wine


and a superb price. Viognier - pronounced vee-on-ye-


ay - is here to stay. Give this unoaked fruit-driven wine a try.


2. In a frying pan, on a medium


heat, add a knob of butter and fry the onion until slightly golden and


transparent. 3. Remove onion from pan and


keep on one side. 4. In the same pan add aiiother


knob of butter and saute the kidneys in it for 3-4 minutes, until firm to the


touch. 5. Remove kidneys and put to one


side. 6. Return onion to the pan and add , , ,


the garlic. Fry for a further minute. 7. Flambe with the brandy (being


careful of the flames). Allow the


flames to subside. 8. Add the cream to the pan and


stir, loosening the residue. 9. Now add the mustard, Worces­


tershire sauce and the tabasco sauce


to the pan. 10. Return the kidneys to the pan


and gently simmer for a further five minutes until the sauce has reduced


and the kidneys are fully cooked. 11 Serve immediately With crusty


bread and freshly prepared salad. Chef's lip: Alternatively serve with


rice and fresh vegetables as a deli­ cious main course.
