OUR Dish of the Week recipe is for a main course taken from • the new menu at The Restau rant, which is situated in the Old Post House Hotel, in King Street. . ,

devised four, new menus all with a French theme to complement the refurbishment of The Restaurant. The unusually decorated dining
room features, as a centre piece, a tree, giving diners a feeling of being in a walled garden, and in the evening it is lit with tiny lights. The Restaurant, which can seat

LAST month's wine club tasting, the basis of this article, was on cham pagne. A selection of non-vintage ranging
in price from £14.99 to £20:69 against the same champagne's own vintage style, again ranging in price from £17.59 to £39.29. Many articles are written in praise of champagne, but I have to admit it is not my favourite wine, so I am looking at the tasting objectively. Champagne is produced from any

one or combination of three permit ted grape varieties. The chardonnay (a white grape), pinot noir and pinot meunier (both black grape vari eties). So it is possible to make a champagne from only chardonnay - the only white grape which is called blanc-de-blanc or from either of the black varieties or a combination of both - which would be marketed under the name of Blanc-de-Noir. A rose champagne can be produced

IT might be oyeretating it to say.nqKi record has created such a furore as this song since the Sex Pistols released "God Save the Queen." All right, the aristocratic duo who per form the song might have swopped safety pins and spiked hair for green wellies and shooting sticks, but their record has certainly helped cause its fair share of controversy. Banned from W.H. Smith's due to its pro hunting sentiment, just listen to the raking it gets in Cameron Me Neish's stinging editorial in the militant ram blers' magazine "The Great Out doors." He writes: "Couched in terms of traditional values, olde English myths and middle class sentimentali ty. the raison d'etre behind the cur rent countryside campaign, as I've said before, is to preserve the com-
immediate consumption and are made from a blend of all three. Each champagne house will blend a style varying the percentages of each vari ety used, to create a uniform taste associated with that house, year after year. Of this style, we tasted the Drappier Cuvee Speciale at £14.99. From D. Byrne and Son, Clitheroe, this was good value fizz, delivering a straightforward soft, yeasty wine with a more gentle mousse than the others. As to the vintage wines - these
but others are available. Our best bottle was the spectacularly fragrant, almost cologne like,Veuve Cliquot Vintage Reserve 1990, very soft and biscuity with a lovely nose and depth of fruit. Another wine from D. Byrne, and at £29.39 is only £9 dearer than the very good non-vintage. As a postscript the champagne

are as follows: Magnum - two bottles. Jeroboam - four bottles. Rehoboam - six bottles. Methuselah - eight bottles. Salmanazar - 12 bottles. Balthazar -16 bottles. Nebuchadnezzar - 20 bottles. Solomon - 24 bottles. Sovereign — 35 bottles.

kettle, pot and black, for if Mr McNeish actually took time out to listen to the record, rather than bleat ing on about its politics, he would hear a jolly, jaunty folk tune, the likes
of which used to be sung by the Dig gers, early socialist farm-hands, of whom no doubt Mr McNeish would

have approved. I t is the sort of a song which should get you to stomp your foot rather than bang your fist on the table. With innocent lyrics like: "We know the glory of the countryside, the glory of the beasts there that swim and fly. It's us who preserve the woodlands, the rivers and the hills, and if they'll only let us, then we always will," it is unlikely to spark off a modern day peasants' revolt. My advice to Mr McNeish is listen to the record, go rambling - and stop rambling on.
