SOMETHING special has come home to roost in a popular Rib- ble Valley watering hole — a youthful team whose talents in the kitchen and behind the bar are certain to entice droves of local pubgoers into the Brown Cow Inn. The new managers of
the Chatburn pub and res taurant are Mr Steven Brewer and Miss Clare Hutchinson, who are bringing a high level of creativity and innovation to the day-to-day running
of this hostelry filled with character. The surroundings have

not changed, from the vil lage setting outside to the
tasteful decor inside. Cus tomers will still find some thing to slake their thirst

the rewards. The bar snacks are just
the tip of the iceberg, but provide a taste of the offerings from the equally mouthwatering a la carte menu. The wide range of choices is displayed on a blackboard and centres around a farming theme. They begin with “ light
bites.” Home-made piping hot soup heads the menu and changes daily. Just a few examples are cream of tomato and tarragon, avo cado and almond, French onion and port. Each bowlful is served with a wedge of crusty granary bread from the bakery
across the street. Other starters include
deep fried country garlic mushrooms, home-made broccoli, cheese and prawn bake and deep fried whole French camembert. For main courses, there
is the “ farmer's feast.” “We have tried to go for
local home produce and things which are popular,” enthused Mr Brewer. “The menu is a mixture of ideas 1 have had. Having been a manager for com-

extent. Now, I have a free rein.” The salad garnish, for
example, will be a mixture of lollo rosso, radicchio and iceberg lettuce, complete with tomato wedges, cucumber, parsley, sage- flavoured coleslaw and red cabbage in an oil, vinegar and walnut dressing — a veritable feast!
Among the delectable
entrees are country pork casserole laced with ver mouth, roast breast of chicken with a bacon and herb stuffing and another crowd pleaser — fish and chips. “ I t ’s cod and it’s bat
tered, just as you would get in the fish and chip shop, except that we don’t do chips,” Mr Brewer pointed out. “We do some thing called country pota toes, which are slices of
potatoes with their skin left on and deep fried. All our customers so far have preferred them, because they are something a little bit different.” Giant-sized garlic bread
is certain to be another popular item. A fresh loaf
of bread, again from the village bakery, is cut in half, scored and doused with garlic and butter. Mr Brewer has also laid
on a “ home-made pie shop,” offering his own lamb and apricot and pork and Stilton specialities, as well as a specials board, different salads, sand wiches and ploughman’s. The choice is breathtak ing. For children, there is even a “little calf club.” The sweets, like the
soup and specials, will change daily, although pancakes, with a choice of sauces, are to feature per manently. It seems there is something for everyone these days in the Brown Cow kitchen.
Bistro bargain
THE Bowlands Restaurant has opened for business in Chatburn.
The restaurant is part of the Brown Cow Inn. Just
a few paces down the hallway from the pub, the res taurant has a separate menu and more of a bistro
atmosphere. There are candles in terracotta pots on the tables,
pinstriped tablecloths and a chargrill with a stone
chimney in the front of the room, as well as a dance floor and bar. It is a perfect setting for a romantic dinner for two or private function, from a conference to a wedding reception.
Manager Mr Steven Brewer is also taking bookings
for Christmas dinner dances and the menu will'be available from the end of August.
While the food is the main attraction, Mr Brewer will
be bringing a range of activities to both the restaurant and pub. A ’(iOs night has already been held, with quiz nights and treasure hunts in the pipeline. There is talk of a summer hog roast as well.

BRINGING a new flavour to the management and the menu of the Brown Cow in Chatburn is Mr Steven Brewer. Originally from Ley-
land, 29-year-old Mr Brewer first worked in the R ib b le V a l le y while obtaining his HND in hotel management. During his four-year course at Court- field’s Catering College, Blackpool, he worked at the Spread Eagle Hotel in Sawley. Since then, he has
g a in ed a w e a lth o f experience in the South of England and abroad. After first leaving the North West, he spent a year working at a five-star
hotel in Switzerland. On his r e tu rn to England, he landed a job as a pub manager for Bod- dingtons, next working for Regent inns in a trouble shooting capacity, turning around pubs which had been mismanaged. His success eventually
led to employment with Moorland and Co, which made him manager of The Swan, at Pangbourne, near Reading — a pub mentioned in the book "Three men in a boat,” by Jerome K. Jerome. Mi- Brewer further honed his skills there, overseeing a
