Colours: a question of balance
I MAY BE able to sing a rainbow. . . but I certainly can’t wear one according to colour analyst Josephine Marsden.

May is the season of blossoms, when hawthorn, elder and other bushes feature clusters of attractive flowers which contrast with the new greens and make one feel that spring is truly here! Here are two recipes which use the fruits and blosson of the season: ELDERFLOWER 1 pt. Elderflowers or (Vi oz. dried elderflowers) 1 kl. sugar, 1 level tsp. Citric Acid, V> level tsp. Tannin Yeast, 250 gms. White Grape Concentrate
pts. of boiling water. Leave for 10 to 15 minutes. Dis solve sugar in 2 pts. of boiling water and put into fer mentation bin. Top up to 1 gallon with cold water, and whent he liquid is cool add Citric Acid, Tannin and Yeast. Ferment for 1 week in a warm place, and then strain into a gallon jar and add Grape Concentrate. Fit bung and airlock. When fermentation is almost complete (gravity down to 1.000) syphon into a fresh gallon jar leaving sediment behind. Add a crushed camden tablet and leave for 2/3 days. Syphon again and add another crushed camden tab let, 1 stabilising tablet and some wine finings. When clear syphon again, the wine is now ready for bottling. RHUBARB (Hock)
Wash the rhubarb and cut into chunks. Place into fer mentation bin and cover with a measured amount of cold water, add a camden tablet and 1 tsp. Pectolase. Leave for 4 days stirring daily. Strain the juices from the rhubarb and
4 lb. Rhubarb, 1 lb. Raisins, 250 gms. can white grape concentrate, Vi pt. Elderflowers (>/i dried), 1 tsp. Pectolase Yeast Nutrient, 1 lb. Sugar, Hock Yeast.
Put flowers into sterilised fermentation bin and add 2 ’
