WELSH RAREBIT BANANA micEl
2 large slices bread H teaspoon mustard 1 Tablespoon top of milk or mild beer
4oz. Cheddar cheese Cayenne pepper to taste 2 bananas loz. butter. Method: Grate the

1 hard frozen block of. coffee ice-cream
FROST-AND-FIRE BANANA
3 dessertspoons caster sugar
cheese, add mustard and cayenne pepper; mash together with milk or
450 degrees F (Mark 8). Beat egg whites well, add sugar gradually, beat very stiff. Set aside. Halve peeled bananas lengthwise, then cross wise three times. On a flat oven-to-table dish lay banana peices closely to fo rm an oblong bed slightly larger than the block of ice-cream. Place block nea tly on th e b an a n a bed and lay remainder of- banana pieces on top of block. Spoon whipped egg whites over all ice-cream and down sides to seal it completely from air or contact with dish. Bake at once , for two minutes — or until the meringue brown on the edges. Take from oven, pour half a glass of warmed rum over immediately and set it alight as you would with Christmas pudding. Carry it, flaming, to the table. (Serves 4).
