Mega trends


In 2018 we identified 8 mega trends, summarized here. Each trend has continued to evolve over the course of the year, but at differing rates. You may note that some trends have affected certain sectors more than others. For example, the Experience Economy is making waves in the hotel industry, while Better Business (Sustainability) is driving change in Workplace canteens and Shopping Centers. However, in reality, there's no pattern and an element of most of the mega-trends can be found in any of the 8 sectors that follow.


Visitor Attractions: 17% of guests say food and drink facilities which better meet their needs would encourage them to visit more frequently. Given how important repeat guests are for visitor attractions it is no surprise that galleries, museums and attractions are upping their foodservice game in the desire for differentiation. Could visitor attractions play a role in revitalizing high street?

Hybrid stores which are combining retail, experience and foodservice to extend their appeal are changing the face of the high street landscape.


Workplace Food (B&I): Flex operators like WeWork are redefining what the workplace is to a new generation. Forward-thinking landlords and business owners are creating spaces within their offices for collaborative working with some form of foodservice often at the heart of this. Flexibility, convenience and health are paramount, causing a drive for new foodservice innovations to arise.


Foodservice Operators: Innovation in the foodservice industry continues to be driven by the key trends of experience, sustainability and technology. The future of foodservice can be split into two streams. For the more value driven brands, expect an increase in the use of technology to drive down costs through reduced staffing, more streamlined processes and reduced footprint requirements. For the more expensive, “value add” brands we expect to see an increase in the focus on sustainable and local sourcing and the overall customer experience.
