Gosnells meadery raising £500,000 to challenge ‘stagnant’ cider category
Foodservice supplier Santa Maria has introduced a new
online recipe hub and brochure with the aim of giving operators inspiration and ideas to help elevate their nacho offering.
With the increasing trend among consumers to try Mexican food when dining out, the hub aims to enable operators to create elevated food experiences. The website includes a range of 10 nacho recipes including a nacho salad bowl and nacho crispy chicken. Santa Maria’s
taste creator Barnaby MacAdam said the crispy tortilla chip’s fun and colourful visuals
appeal to consumers, while its popularity with operators is due to its versatility, relative ease to prep in the kitchen and the “additional revenue opportunity” the snack offers.

Gosnells’ founder Tom Gosnell (pictured) said the cider category is “stagnant and lacks the innovation and premiumisation seen in other alcohol categories”. He said Gos- nells’ 4% ABV sparkling honey- based drinks, which are labelled as Nectar, could “fill this void”. It is hoped the six-figure sum,

also help to expand Gosnells’ pres- ence further into the on-trade. Gosnells was founded in 2014
and claims to be London’s first meadery in 500 years. It is stocked in 75 hospitality venues including Cubitt House, Drake & Morgan and Brewdog. Alongside raising funds, Gos-
nells is searching for a location to open a second bar. It launched a
trading experience for Heinz Selection members, an initiative which connects independent burger houses with the Heinz brand. The resource includes insights,
culinary expertise, and industry guidance on how operators can achieve commercial success this winter season.
