Heirloom and T820, also in cultivation.


Hesen continues: “Spawn production in France now uses the millet carrier ‘Sprint’. ‘Sprint’ is a medium added to the millet, which stimulates enhanced mycelium growth from the grain into the compost. In Western Europe, around 1000 tons of compost incubated with T820 are now being delivered per week and the trend is rising. We try to supervise bulk phase III compost with our strain as well as possible.”


In practice


One of the Dutch growers who has completely switched to the T820 for his brown mushrooms is Henk van Roij from Weert. He talks about growing the new Sylvan strain. “There are similarities between the white A15 and the brown T820. Particularly its spontaneous pin- ning. It does tend to colonise the casing a little slower, and sufficient CAC is absolutely neces- sary, otherwise the pinheads form too deep in the casing soil. And, after filling, I think you should have given 70% of your water in the first 36 hours. I then leave spraying for a day before applying the final 30%. This gives me strong mycelium. Heavy casing soil, and work the top layer well, those are the important points.” Whereas not all the Heirloom pinheads turn

into mushrooms, the T820 shows full develop- ment according to Van Roij, just like A15. “During pinhead outgrow, the RH should already be below 90%. I don’t humidify with steam. When the compost temperature rises, you can spray the flush with water at an early stage. Before picking I apply six to seven litres of water/m2 in two days, but I don’t apply any water the day before the bulk of the mushrooms are picked. After that, every day again. Pin- heads in the second flush all grow. And while Heirloom occasionally has peak days when you have to pick up to 10 kg/m2, the T820 has steady production. I sometimes also give around eight litres of water on the second flush, and up to a further eight litres after the second flush. You have to maintain good moisture in the casing, otherwise the colour fades too. The quality is good. Sometimes you see some watery stipe, like an A15. But this can be contained with a lower RH and lots of evaporation. I don’t really have a clear idea yet if the picking perfor- mance is better than Heirloom, but it does seem to be. For the time being, I’m producing around 29 kilos in three flushes, with 98% class 1.”


The signs are all there that Sylvan Tuscan 820 is a strain capable of competing with the Amycel Heirloom. The final choice is up to the growers, but both strains can exist in harmony.
