Impact of condemnations Whenever the handling of an affected carcass changes its nature, structure or composition, the product becomes atyp- ical, whether it be a whole chicken or skinned cuts, which then directly impacts both carcass and industrial yield. When the monetary value that was not added is taken into ac- count, i.e. the opportunity cost, the immediate consequence is that the product’s value becomes distorted. On top of which the pressure to meet orders from the sales depart- ment means that it is necessary to use other raw materials in a better condition. The production, slaughter and processing schedule underpins the need to balance the production mix. Adjusting to the possible consequences of there being no product in the production schedule to arrive at the refriger- ator, the value that it might have been possible to add, along with compensation and priority: these are all factors


that need to be taken into account in production orders. It is important to note that the product processed under re- duced slaughter speed conditions has already had its selling price defined. Therefore, irreversibly impacting sales margins with higher or lower intensity according to the fluctuations in slaughter speed, cummulated over days, weeks and months. Under these circumstances, meat losses will be related to health condemnations and must be calculated as losses.


Economic impact of losses The condemnation of broilers detected during the sanitary inspection has a significant economic impact on industrial performance. This performance is considered in terms of car- cass yield and the lower return in terms of adding value to the carcass. Usually, health condemnations related to the skin lead to losses ranging from 0.5-1.0 kilogram per affected
