y Biology teacher instructed us one day during our freshman year at Silliman University: “Trace the hamburger that you eat as it enters your mouth and leaves your body. Indicate the nutrients and enzymes it contains, and the changes that happen as they pass the digestive tract.” It was one of the many tough questions thrown at us wanna-be professional nurses in the early years of our nursing education. (Only 60 out of 120 of us survived!)

is hard to see. The nutritional content of what we eat determines the composition of our cell membranes, bone marrow, blood, and hormones. It is a fact that an average adult loses roughly 300 billion cells to old age every day and must replace them. Hence, what we put in our bodies is of utmost importance—and why ‘clean food’ is an urgent priority and ‘junk food’ is neither cute nor innocuous. Clean foods are minimally processed and as direct from nature as possible. They’re whole and free of

additives, colorings, flavorings, sweeteners, and hormones. Processed foods have low amounts of fiber and water, a high ratio of calories to nutrients and sugar, salt and flavoring, and a lot of chemicals. So why do we have to eat clean? Our bodies are replacing billions of cells everyday---and using the foods we consume as the source of building materials. Eating well is part of the formula that can reduce our risk of any major
chronic disease by 80 per cent and reach our inner selves to improve the health of our genes. So focus to put clean foods on your plate and know what’s at stake: life itself, the liberty that comes with good health, and the likelihood of happiness.” (Mom was right, you are what you eat by David Katz, 2010). How to eat healthy. “The Centers for Disease Control asserts that eating a diet high in fruits and vegetables helps lower your risk of chronic diseases like cancer, cardiovascular disease and diabetes. In contrast processed foods which contain trans fat, an ingredient which is added to help them more shelf-stable, has been directly associated with an increase in

heart disease and ultimately death. In addition eating fast foods and restaurant meals, may also affect your health adversely. It is suggested that you should eat more of vegetables, fruits, nuts and seeds and whole grains. If you’re a carnivore, eat lean sources of protein like fish, chicken and turkey. Choosing the right foods daily leads to a healthy body, and would increase your odds of a longer, happier life.” (You are what you eat, so eat these foods for optimal health by Scott Christ).

The healthy eating plate endorsed by the Harvard School of Public Health (similar to Pinggang Pinoy of the Food & Nutrition Research Institute) stresses the following: fill half of your plate with Glow foods: a variety of fresh fruits, and vegetables; a quarter of your plate with Go foods: whole grains; and the remaining quarter of your plate with Grow foods: proteins. (Joy Arabelle Fontanilla, 2017). National Nutrition Month was celebrated in July with the theme: Ugaliing magtanim, sapat na nutrisyon aanihin. So let us start a backyard garden of fruits and vegetables, and choose to eat clean foods.
