TRUFFLE ASPARAGUS Ingredients
• 6 Green Asparagus(cleaned and blanched) • Salt and pepper to taste • 1/2 tsp butter • 1tsp Chilly Flakes • 1tbsp WhiteTruffle oil
Directions
• Heat butter and sauté asparagus for 1 minute. • Add salt,pepper and chilly flakes. • Take it off flame. • Add truffle oil and toss. • Dress with parsley and serve
Ingredients
• For the Quiche • Pastry • 1 cup flour • 3/4 th cup butter • For the filling • 2 Eggs • 1cup cream • salt and pepper to taste • 2 slices ham chopped • 1tbsp butter • • 4 Lamb chops (preferably Australian) • salt and pepper taste • 2 tbsp olive oil • 1tsp rosemary • 1tsp thyme • 4-5 cloves of Garlic • 1 cup jus • 1tbsp onion chopped • 2 cups Brussels sprouts(blanched) • 1tbsp butter • salt and pepper to taste
Directions • Rub butter into flour lightly till it resembles bread crumbs.
• In a bowl,knead a dough by adding water. • Refrigerate for 30 minutes. • Then roll the dough and line a pie dish base evenly with the rolled dough up till the edges of the pie dish.
• Bake at 180 degrees for 10 minutes, middle rack. • Take it out and cool at room temperature. • Beat egg,cream ,salt and pepper in a bowl making sure that there aren't any bubbles.
• Add the above mixture in the pie dish along with ham. bake till the quiche sets approx 20-25 minutes at 180 degrees.

For the lamb chops • Rub salt ,rosemary, thyme,minced garlic and pepper to the lamb chops. • Heat oil and fry the lamb chops on high heat,till it turns brown. • Transfer in a baking dish and bake for 15-20 minutes at 170 degrees. Remove from oven.
• Cover with foil and let it rest for 15- 20 minutes. • Brussles • Heat butter ,and salute the blanched brussle sprouts for 2-3 minutes on high flame stirring continuously.
• Assembling on each plate • Serve lamb with jus along side, brussels sprouts and a piece of quiche .
