Kale, avocado, and quinoa salad


At Early Street Community Garden, the kale crop lasts through the first frost. This recipe featuring the powerhouse veggie is a favorite at garden potlucks.


INGREDIENTS ● 1 cup uncooked quinoa ● 2 cups water ● 2 tablespoons balsamic vinegar ● 1/4 cup olive oil ● 1 teaspoon Dijon mustard ● 1/4 teaspoon sea salt ● Fresh cracked black pepper, to taste ● Zest from 1 lemon ● 1 tablespoon fresh lemon juice ● 3 cups kale, chopped ● 1 large avocado, diced


Combine quinoa and water in a medium pot. Bring the water to a boil, then reduce heat and cover. Simmer gently for 15 min- utes. Remove from heat. Let covered pot stand for 5 minutes, or until remaining water is absorbed. Remove lid and fluff quinoa before setting pot aside to cool. Prepare dressing by whisking together balsamic vinegar, olive oil, mustard, salt, pepper, and lemon juice and zest in a bowl. Set aside. In a large bowl, combine kale and avocado with cooked quinoa. Toss together with dressing. Salt and pepper to taste and serve chilled or at room temperature.

Protected with help from The Trust for Public Land, these windswept cliffs are the first onshore addition to the reefs and rocky islands of the California Coastal National Monument.


The cliffs at Point Arena are a popular spot for whale-watching: gray whales pass close to the coast on their annual migration.
