equipped with two rows of shelving, and the number of beds varies between five and seven high. In the summer months the phase III compost is filled at a rate of around 80 kg/m2, and at 85 kg/ m2 in the winter months. The compost is delivered in bulk. Supplement is added at a rate of approximately 1 kg/m2. The casing soil is sourced from the Italian region of Bolzano and is of a heavier type with clearly visible remains of plants. The mushrooms are produced in a five-week cropping cycle and harvested manually in two flushes, chiefly for the fresh market. 80% of the mushrooms are sold with the stump attached –


this is good for production, the picking perfor- mance and the shelf life. Weekly production depends on the number of rooms filled in a given week and varies between 90 and 95 tons per week. All the mushrooms are traded by Funghidea, the company’s own marketing organisation. In addition to their own production, around 15 tons of mushrooms per week are sold grown by other farms. What is striking is the extremely market-cen- tric production and the wide range of packaging for processed fresh mushrooms and a huge number of mixes containing herbs and other varieties of mushrooms.
