one new room, or three old ones, is filled on a Monday. The compost, which has been spawn-run for 20 days, comes from Sterckx, and is filled by contractors Wieman. The filling weight is 87 kg per square metre, and the compost is spawned with Lambert 931. Euroveen supplies the
casing soil, in Carbo 8 quality. Compost at added at casing on the filling machine and the surface is levelled too so no ruffling needs to be done afterwards in the growing room. After filling, one litre of water per square metre is applied, and from Tuesday onwards two litres of water is sprayed over the beds at three and a half hour intervals. This process is repeated on Wednesday morning. This generally means that 21 litres of water is sprayed in the growing rooms, followed by a 20-24 hour recovery period before cool down is started on Friday morning. During cool down, the air temperature drops by 0.1 degrees per hour from 21 to 17.5 degrees Celsius. When the compost tempera- ture dips below 24 degrees, the air temperature is raised again to 18 degrees. The harvest of
the first flush is aimed at day 16 - Wednesday. On the Friday before, the air temperature is lowered to 19 degrees and the pinheads are knocked off the beds (process of removing the first pinheads to improve the uniformity of the flush), and three litres of water is sprayed per square metre. The RH is set to 88-89% and the CO2
to
1200 ppm. From Monday, four litres of water is applied every

six hours up to a maximum of 24 litres per square metre, and on Wednesday morning the harvesting machine is acti- vated at six a.m.. After cutting, and before the stumps are removed, two litres of water is sprayed on the beds, followed by eight to 12 litres depending on the state of the casing soil. The aim is to harvest the second flush on Friday, and the third flush on Tuesday – 10 days later. A further 12 to 15 litres is sprayed before the second flush, with another three before the third flush. The air temperature is con- trolled to steer towards what are basically regular, fixed har- vest days. The average yield in three flushes is between 37 and 38 kg per square metre. The mushrooms are harvested in various grades which are sold on to Champimer, Prochamp, Freezit and Van de Marke.
