would like to begin by saying hello to all our Oyster Bay owners. There have been a lot of changes at The New Inn over the last couple of months but I’m pleased to say I will be managing


this fantastic facility for the foreseeable future. I started over the Easter weekend and it has been an exciting time personally. Unfortunately we said goodbye to a few staff but have still got a core of good people and have recruited for the season ahead and have some real characters. Plus, with our students coming home for the Summer it looks like being an exciting season. If we haven’t yet met, please come over and


enjoy our fantastic menu or pop by for a drink. If you have any suggestions or feedback, please don’t hesitate to come and speak to me.

Born and raised in the local area having spent the early part of my Childhood in Honduras, Central America, schooled in Cornwall and attending Cardiff University, I have been a Cornishman who


has not been afraid to travel and see the World.


I have been involved in the hospitality industry in some shape or form since leaving school with my first job being a bar man at Caister Holiday Park near Great Yarmouth. After leaving University I was a trainee Manager for a Restaurant chain in London before travelling the world on cruise ships, 2 years with celebrity cruises doing New York-Bermuda with the winters in the Caribbean before joining P&O and finishing with a World Cruise. I came home in 1994 to work in a Hotel in Penzance


which I later became General Manager of before buying my own pub overlooking St. Michaels Mount which I had for 5 years. Since then I have been in hotels in Cornwall and a city centre hotel in Salisbury which when I started was a 3 star and when I left was a 4 star hotel. The last 2 years or so I have spent with St. Austell Brewery around their Managed Estate. I am a very proud Cornishman, Rugby and singing are


very close to my heart. I have a depth of local knowledge especially from the Perranporth coast to Lands End and back the South Coast to Falmouth. My family are all from this the Redruth area and this is very much home. I strongly believe in Cornish produce; our fish, meat and locally grown vegetables are second to none.

I started my career in Redruth, as a commis chef in a traditional pub called Trickies. I looked after the starters and whatever else was required of me – the memory of prepping mussels will stay with me for a long time! Following that, I moved to Malvern and worked across three food lead pubs – it was really interesting. In the Midlands you eat meat and in Cornwall, you eat lots of fish. I gained a whole new skill set, just from a change in geography. I returned to Cornwall and took my first Sous Chef position in a hotel/pub in Perranporth. After 2 years there, I was given the position of Head Chef


at a 5-star, luxury resort in Portreath and remained in that role for 3 years. I now work at the New Inn, where I have found the perfect balance of everything I like to do, making high quality food in a pub environment.
