A summer treat for two, during the winter!

Aries (March 21 to April 19) A longtime relationship comes to an end this month, with the fallout being less than kind to either party. Take this opportunity to reflect upon who you are and what you want for yourself. You are ultimately in control of who you let in and out of your life, so choose wisely.

Taurus (April 20 to May 20) The news you were waiting to ehar finally comes, and it's good news! Congratulations, all that time wondering and all those stressful nights lying awake hoping for the best now seem worth it. Take this good news and run with it, knowing that life is that much better.

Gemini (May 21 to June 20) You will not be alone on Valentines Day 2016, as you finally find that someone who gets you at every level. Don't jump in too quickly, as this can be scary for both people, but don't be afraid to take chances either. It's better to regret a mistake than regret never having acted at all.

Cancer (June 21 to July 22) Date night on the 14th? Why not try out that new spot you've been dying to go to. You know, the one with that thing you like. Everything is aligned to make it one of your most enjoyable Valentine's Days ever. So get out there and enjoy yourself, you've earned it.

Leo (July 23 to Aug. 22) Someone elses mistake forces you to work overtime this month, but the hard work and added pay proves to be rewarding. Buy a lottery ticket, and laugh about your past problems as you sail off into the sunset. Take THAT, co- worker that made you put in extra time!

A la mode, of course. I

t may be cold outside, the snow may be blowing on the streets, but inside our homes in the month of February there is always love in our hearts. Sometimes a summer treat is all that is

needed to bring a smile to your loved one’s face. And why not! An easy to prepare light dessert that will warm anyone’s heart.

Ingredients: 4 ounces semi-sweet baking chocolate 2 tablespoons unsalted butter 2 tablespoons sugar 2 tablespoons caramel 2 large eggs 2 tablespoons flour Pinch of salt

Preheat the oven to 425°F, and grease

two small ramekins with butter. Pour in a little caramel, enough to cover the bottom of the ramekin. Place the ramekins in an oven proof dish. Chop the chocolate then place inside a metal bowl.

In a saucepan half fill with water then sit your metal bowl inside. Turn the stove on and let the water simmer melting the chocolate. Once all the chocolate has melted leave to one side. In a medium mixing bowl, cream the butter and the

sugar with an electric. Te mixture should be thor- oughly combined, smooth, and paste-like, that means no lumps.

Blend two eggs to the creamed butter

and sugar, and beat it with the electric mixer until all ingredients are combined and the mixture is starting to foam. Add flour and salt, and again beat everything until it’s thoroughly mixed. Add about 1/3 of the melted chocolate

to the mixture, using a rubber spatula to gently fold in. Add the rest of the melted chocolate, and fold together until all in- gredients have combined. Divide the mixture evenly between the

two ramekins, then place the cakes in the preheated oven until the tops are just set but the cakes still wobble slightly, they should cook for around 11 minutes. Let the finished cakes sit in the ramekins for five minutes once baked. Ten, turn

each ramekin over on a dessert plate, and tap the bot- toms of the cups so that the cakes fall out, the caramel will have melted leaving a glistening top. Serve immediately, with fresh strawberry coulis and

ice cream, a dash of mint to give it color. Ian Leatt is an experienced chef and general manager of Pegasus Publications.

Vacation time and packing F

ace it! You work hard for your money and by the time February comes along, you merit a well- deserved holiday away from it all. Yes, bring on the Tropical weather, fancy um- brella drinks and beach life. For some, picking a desti-

nation, packing a suitcase, and flying off can be daunt- ing. It has been said that packing for a holiday is not only a skill but an art few have mastered. Te trick is being able to choose just enough out f its and necessities, to survive your stay. Travelling to a warm area,

allows one to bring a few more attires, as summer clothing is

much lighter and for the most part smaller than bulky and heavy winter wear.

Just the space one bulky turtleneck

occupies, you can have three sleeveless tops, a pair of shorts and a skirt. So what to bring??? Some may encourage you to bring

the amount of clothing that you would normally wear while at home – if you wear 8 tops in 5 days, then this is your gauge. I feel finding mix and match outfits give you more variety without stressing the suitcase latches. Tis would be the worst case scenario, your suitcase popping open on the carousel in a strange country. And I speak from experience. Tankfully, I can now laugh about it. Having reviewed several lists, I find this one to work for

me. I am not a t-shirt person, so I like the idea of taking a denim shirt, a large sheer breezy white shirt, a pair of navy capris as well as white ones, and two skirts, (one flared and the other knee length). I take one cardigan, in a neutral colour, which I can wear should the weather

February 2016

Virgo (Aug. 23 to Sept. 22) Don't let the winter blues get you down. Find and embrace a hobby to help you through the cold months, or better yet find somebody to share that hobby with. Remember, spring is just around the corner and winter is basically over. Spring will bloom new opportunities and relationships.

Libra (Sept. 23 to Oct. 22)

It's not to early to start spring cleaning, and that doesn't just mean going through your old clothes and things. Rid yourselves of the things/people/jobs in your life that drag you down. Life is too short to spend another day doing things you just don't want to do.

Scorpio (Oct. 23 to Nov. 21) Ok, so you fell off your New Year's resolution of living healthier almost immediately. Going to the gym every other day was never going to fit into your schedule, but you don't need fancy equipment to eat right and work out. Find what makes sense for your schedule and keep at it!

Sagittarius (Nov. 22 to Dec. 21) Seriosuly, I highly doubt the cute guy in your class bites. Even if he does, the only way you'll ever know for sure is if you get up the nerve and ask him out. No more excuses, no more wussing out at the last second. As Shia LaBeouf would say: "JUST...DO IT!"

Capricorn (Dec. 22 to Jan. 19) Someone’s a little flashier with their ideas at work, so they often get more praise. Don’t let the green monster seep in – you’re a top performer, your colleague is just a scene- stealer. Lay the groundwork for a future project to blow their minds. You’ll have your time in the spotlight.

be cooler than anticipated in the evenings. And note colours will depend on your preference and palette, I like to take 4 sleeveless tops, two dressy enough to

take you to a party event, or a fancy restaurant. A couple pairs of shorts, are also a great idea. I like one pair to be cargo style, because this allows you to go sightseeing and carry what you need, Identification, money, and whatever else you deem necessary. I love hats that have storage space inside them, where you can put your sun- glasses, and a lip gloss. You should have at least a couple bathing suits, and

a cover up. You will also need to bring some footwear, and here I encourage you to bring shoes you can be comfortable in while walking. Tis should leave room for your personal items, a camera, your facial and body products, and something to read. You are encouraged to pack at least one week before leaving. Tis gives you time to make your mix and match outfits, go over what you need as compared to what you think you want. And remember this very important part of travelling

– you will be buying new clothes, sandals and whatever tickles your fancy. So the leaving room in your suitcase allows you peace of mind, to be able to come back with all sorts of great goodies. Happy and safe travels…

Aquarius (Jan. 20 to Feb. 18) Your boss is wrong. And not in a "they made you do some- thing you didn't want to do that was actually right but you don't want to do it" kind of way. But actually wrong. Don't be afraid to voice your opinion. Your boss should value your opinion and be grateful for the correction. If not, maybe they aren't the employer for you.

Pisces (Feb. 19 to March 20) Maybe it's time to consider a new job, but have you ever considered looking within your current organization. Many companies offer the opportunity to switch roles, as it's a good way to retain trained employees who may just need a slight change in scenery.
