Barbequing 2014 BY PHILIP D. ZALEON

e fondly recall the weekends we enjoyed when we were kids, during which family and friends would gather on the patio or

deck to share stories, a few laughs and great food. Typically, mom and her friends would run back and forth between the kitchen and picnic table, swating mosquitoes, shooing flies and seting the table. Dad and his pals were gathered in a circle around the charcoal grill; each with a drink, taking turns stabbing dinner and offering expert advice on the best way to cook the perfect steak. And you? You were relegated to running errands for anyone more than five feet tall—into the house and back a million times! Many of us have transformed the setings for these rituals by adding more contemporary and advanced features. We’ve replaced the single charcoal grill with several cook- ing appliances, using gas, charcoal, wood or a com- bination of fuels. As the outdoor kitchen trend has evolved since the early 2000s, we have built massive stone barbecue islands, complete with stainless steel accessory doors and bar stools so that we can enjoy the company of others while we cook; we’ve also cut down on the amount of laborious steps needed to get the job done. But, if this is your vision of a perfect out- door kitchen, you’re still living in the past. Let’s bring you up to 2014 speed!

Begin with the concept of outdoor entertaining. Tink about it the way you think about how you entertain or simply enjoy meals, indoors. Friends and family gather in the family room or kitchen. In each room there’s a seating area, a secondary place to gather—around the island or a fireplace on chilly evenings. View your outdoor space the same way. Today’s outdoor entertainment space oſten consists of a large dining table for meals, an arrangement of outdoor furniture for socializing, a pergola or shade for comfort and a designer kitchen—complete with
