Rainbow Vanilla
Sugar Cookies Ingredients - 225g butter, softened 200g sugar 1 egg
2 teaspoons vanilla paste 340g self raising flour
sugar sprinkles/hundred’s and thousand’s First, Preheat oven to 190 C / Gas 5.
Then in a large bowl, mix together the butter, sugar and vanilla paste until light & fluffy.
Next beat in egg, adding a spoon of flour. Then gradually mix in the rest of the flour to make a soft dough.
Now the fun part - Roll rounded teaspoonful size pieces of dough into balls with your hands, dip into sugar sprinkles or hundreds and thousands and place onto baking trays lined with foil lined parchment paper (foil side down).
Bake for 5 to 10 minutes in the preheated oven, or until golden. Timing will depend on size and the temperature of your oven.
Let them cool on the tray to crisp the bottom and when completely cool store in an air tight tin - if there are any left over that is!
These are perfect for packed lunches, parties or school bake sales.

small steps Stuffed Peppers
If your wondering what to do with that left over bolognese sauce? Why not make stuffed peppers, it makes a quick healthy tea!
Ingredients:
4 Peppers (any colour) left over bolognese sauce 1 packet of microwave rice Cheddar or feta cheese Spray olive oil
Method: Wash, slice off the top and de-seed the peppers.
Place the peppers in a oven proof dish so they stand upright.
Chop up some feta, or grate some cheddar cheese.

Simply layer the bolognese sauce and rice into the peppers and top with the cheese. Then put the pepper tops back on.
Spray lightly with olive oil. Bake in a pre heated oven at 180°c for about 30 minutes.
