Cheesy Bubble & Squeak
A familiar recipe, but often forgotten on the bookshelf - yet delicious every time!
1 lb / ½ kilo cooked potato, mashed
8 oz / 225g cooked kale or savoy cabbage, finely chopped 1 egg 4 oz
100 g grated cheddar cheese (more if you like it very cheesy!) Fresh grated nutmeg Salt & black pepper
Flour for coating
1) Mix the potatoes with the cabbage or kale, beaten egg, cheese, nutmeg and seasoning.
2) Divide into eight patties.
3) Chill for at least an hour if possible – you can prepare the night before if easier.
4) Toss the patties in flour to coat. 5) Heat some oil in a pan.
6) Slide the patties into the oil and fry on each side for about 3 minutes until golden.
7) Drain on paper towels before serving.
