AN AFFINITY WITH FISH
Wine to dine
Wine expert David Austin of Reuben’s Wine Store in Dunfermline selects four wines to accompany this quartet of dishes
‘Brown has a good relationship with the local fi shermen’
DOMAINE SCHLUMBERGER RIESLING ‘LES PRINCE ABBES’ 2009 (£20.99) Alsace rieslings differ from those across the Rhine in that they are designed to be drunk with food and are dry and full-bodied. This classic example works well with smoked dishes due to its fragrant character. The naturally high acidity in the wine counters the creamy full mouth-feel of the Cullen Skink and helps refresh the palate for the next spoonful.
Left: The seafood linguine is packed with shellfi sh. Far left Marvellously meaty monkfi sh in an extravagant creamy sauce.
LEYDA RESERVA SAUVIGNON BLANC, LEYDA, CHILE 2011 (£10.95) This fresh light sauvignon from Chile’s cool-climate region of Leyda has a crunchy green bite and ample acidity to match the tempura coating, while the limey citrus and grapefruit notes match the langoustines perfectly.
VERGELEGEN CHARDONNAY SOUTH AFRICA 2011 (£14.99) The linguine dish contains chardonnay, so we’ve gone for a fi ne example from one of South Africa’s lead ing producers. Vergelegen know how to get the best from the grape – this one has been given just the right amount of barrel-ageing. It has a lovely lemony character, a rounded palate and enough crispness to hold its own against the richness of the dish.

CHATEAU KA, VIN BLANC, BEKAA VALLEY, LEBANON 2011 (£9.99) A seriously meaty fi sh like monkfish requires a wine that will add its own weight. Here the fi sh is cooked in an aromatic, anise-style sauce that gives it a fragrant fl avour. Lebanon may not be the fi rst wine country you think of but it is home to some world-class producers. Château Ka is one of them and makes evocative complex wines from a crazy mix of grapes. Here, muscat, chardonnay, sauvignon blanc and viognier are all bound together. The result is a wine of exotic perfume, zesty acidity and a long fi nish. What more could you want!
