1 tbsp caster sugar Small handful of fresh coriander Lemon mayo 1 tbsp mayonnaise Half a lemon, juiced
Method: Add all the ingredients for the sweet chilli dip together and blitz with a hand-blender for 30 seconds. Set aside. Combine the mayonnaise and lemon juice to make the lemon mayo. Make a batter by adding the cornflour, plain flour and sparkling water together and whisking until smooth. Peel and de-vein the langoustines, coat in the batter and deep-fry until golden. Serve with the dips on the side.
