Carrot and Courgette Croquettes


Carrot and Courgette Croquettes are quick and easy to make. They are a great way to encourage your toddler to eat more vegetables.


Ingredients: Makes 6 croquettes 75g carrot, peeled 75g courgette, trimmed 75g potato, peeled 1 medium onion, peeled 3 tbsp ground almonds 2 tbsp plain flour


2 tbsp lightly beaten egg Salt and pepper to taste Vegetable oil for frying


Method: 1. Grate the carrot, courgette, potato and onion.


2. Cup small handfuls of the grated vegetables in the palm of your hand and squeeze out the excess moisture.


3. Put the vegetables in a bowl and mix with the almonds, flour and egg.


4. Season to taste.


5. Using your hands, form into 6 croquettes and sauté in vegetable oil until golden on both sides and cooked through ( about 6 minutes).

These bars are very moist with a rich banana and chocolate flavour. They are an after-school snack that toddlers and pre-school children will beg for time after time.


Ingredients:


Sponge base: 175g butter, at room temperature 175g caster sugar 3 eggs, beaten


250g self-raising flour 1 teaspoon baking powder


2 bananas, peeled and roughly mashed


Frosting: 50g butter


25g coco powder 250g icing sugar


1-2 tablespoons of milk chocolate sprinkles


Method: 1. Cream the butter and sugar together in mixing bowl until pale and fluffy. Gradually mix in alternate spoonfuls of beaten egg and flour until all has been added and the mixture is smooth. 2. Add the baking powder and mashed bananas and mix well. 3. Spoon the mixture into a 18 x 28cm baking tin lined with non-stick baking paper, and level the surface. Bake in a pre-heated oven 180c (350F) or gas mark 4, for 25-30 minutes until well risen. 4. The cake should be golden and spring back when gently pressed with a fingertip. 5. Cool in the tin


For the frosting: 1. Heat the butter in a saucepan. 2. Stir in the coco powder & cook gently for 1 minute. 3. Remove the pan from the heat & mix in the icing sugar. 4. Return to the heat & heat gently stirring until melted
