sharp blade and a sharp point - wedding cake icing can be remarkably hard.

At a formal reception the first cut into the cake is made ceremoniously by the bride and groom together.

The caterer then removes it to the kitchens where it is portioned out for the guests.

Do remember to instruct the caterers which tier is to be used.

The usual form with a three tier cake is for the largest, lower tier to be cut for those present, the second tier to be reserved for the Christening of the first born, and the third to be retained for the couple’s first anniversary.

Where there are more than three tiers it’s up to the couple to decide on disposal of the other tiers.

Sometimes the second of four tiers is presented on the buffet table for the guests at the evening reception, if one is held.

Sometimes the fourth tier is designated for cutting and sending to absent friends and relatives - a job for the bride’s mother in the days following the wedding.

Have your cake and eat it!

Brides in 2012 can now have their cake and eat it!

The popular cake deal from Lawsons just got better.

It is now made from scratch at a local Devon bakery and the three tier cake deal, which includes stand hire and a wedding knife, is available in rich fruit cake, vanilla sponge or chocolate sponge.

‘We recognised that many couples were opting for a sponge cake for their wedding and that chocolate and vanilla cakes can be used as a dessert at the wedding breakfast’, commented Liz Lawson from Lawsons.

Decorating the cakes couldn’t be easier.

There is a vast assortment of wedding tops, ribbons and sugar flowers to choose from and the friendly staff at Lawsons will be happy to offer advice so you can create the perfect cake to match your wedding theme.

Whatever is decided, it is absolutely essential to make those wishes known to the caterer before the whole cake is cheerfully broken up and divided amongst those present.

What must be faced, whatever type of cake is chosen and whoever is given the job of making it is, it will be an item of considerable expense. Making it is no job for an amateur.

Trying to economise is a false economy - it always shows.

Well-meaning but inept relatives must be diverted from offering to bake the cake or decorate it. Only accept such offers if you are 100% certain of their ability and dependability.

Finally, in view of its importance to the

reception, it’s no bad idea to order it as soon as the reception has been arranged.

It cannot be said too often that, you really cannot risk leaving the ordering of the wedding cake till a week or two before the great day itself!
