supplied by Mr and Mrs Betts at Otham, who produce to a particularly high standard." Mr Lister is also proud of their geese
and large chickens. "This year we are using the Brook Barn
geese from Great Baddow in Essex. They are fed on home-produced wheat and finished on a cereal-protein diet. And, we have the always popular,
locally reared capon from Mr Richards in Westwell. These are reared to a high level producing a succulent and juicy flavour." All
