Parker says the response has been gratifying. “We have cards in each room asking guests to considering using linens more than once—and at least 75 percent of our guests partici- pate,” she advises. Many hotels do this to help green their property, but South- fork Hotel takes the commitment one step further by using environmentally friendly detergents for laundering. Recycling areas throughout the
hotel for paper, cardboard, plastics and metals encourage guests to keep waste sorted. Restaurant grease is picked up and recycled for use as an alternative fuel, and organic food waste is picked up and composted. Parker notes that the re-use ethic even finds its way into Southfork décor: “When our horses get re-shod, we put their old shoes to further use as door handles, door stops and door fasteners.”
Not only is the hotel green-certi- fied, so is the restaurant, where adher- ence to stringent certification require- ments are site standards. “There are only three restaurants within the Dallas- Fort Worth Metroplex that are certified as green restaurants—and Remington’s at Southfork is proud to be one of them,” says Parker. A survey by the National Restaurant Association showed that two out of three consumers said they would be likely to choose a restaurant based on its environmental friendliness.
