It has been nearly ten years since Chef Matthew Fackler opened Relish, his Colorado-inspired restaurant in the heart of the Rocky Mountains and Colorado’s famed ski hamlet of Breckenridge. And while the slopes of Breckenridge Ski Resort and the town’s picturesque Main Street had long been popular with outdoor enthusiasts, the restaurant scene had yet to be defined. Chef Fackler was about to change that, for good. Utilizing his love for Colorado, he opened Relish in 2006, focusing on local cuisine.

has been taken — and that is when you are hooked. A Colorado artisanal cheese plate, potato chip crusted rocky mountain trout, pan seared duck breast with butternut squash habanero bacon hash, and pork belly sliders are just a few mouth-watering menu items on the winter menu. The menu is changed seasonally and sometimes daily to adapt to the freshest Colorado-grown products.

“I buy local and change my products with the growing seasons to give people a taste of what it is like to live in Colorado.”

Some have called Relish “Breck’s new cool,” and the meals themselves “moments that could hold you over for a year.” Relish has been featured in The New York Times, Outside Magazine, the London Times and many others, but Fackler believes some of the best accolades come from Breck locals, who mix in nightly with guests from the world-over.
