Despite their tendency to eat foods high in saturated fats, such as cheese, French people enjoy low cardiovas- cular disease rates. Now, new research theorizes that stinky cheeses may help explain this so-called “French paradox.” In the study, published in Medical Hypotheses, scientists found that the fermentation process in cheeses such as Roquefort, Bleu d’Auvergne, and Camembert forms small protein fragments that inhibit enzymes controlling blood pressure and inflam- mation. So, although the fact that “French women don’t get fat” could be thanks to great genes or a culture of mindful eating, we’re hoping this study gives us an excuse to break out the cheese board. –J.B.
