Plenary: Whistler, B.C. continued from page 20

Saturday morning broke gray, rainy,

and cool—not quite perfect weather for the whitewater-rafting trip we were scheduled to take withWedge Rafting on the Green River. Undeterred, we donned wetsuits for our hour-long adventure on the water with our cheer- ful Kiwi river guide. After a delicious lunch of bright

summer salad with citrus salsa, halibut burgers, and craft beer at the Brew- House at Whistler, in the town’s lively Lower Village, we drove 10 minutes north toWildPlay Whistler, where we

were harnessed in for a challenging “elevated obstacle course” called Monkido. Incorporating zip lines, suspended bridges, “scramble nets,” and swinging logs, Monkido makes for a great and unifying (if at times nerve- racking) team-building activity. Saturday came to a close with a

farewell dinner at Sidecut, which can accommodate group dinners for up to 90 people. The restaurant’s signature steaks—the top 2 percent of Canadian beef, aged 40 days—are enlivened by one of six spice rubs, including “Edison’s Medicine,” a 14-herb-and- spice rub created by Chef Edison.

The cuts are then seared to perfection under an 1,800-degree infrared grill. When it came time to leave the Four

Seasons and Whistler, my companion and I were understandably reluctant to go—but at least we had the knockout drive back to the airport along the Sea to Sky Highway to look forward to. For more information about the
