SERVES 4 Prep: 10 mins Cook: 15 mins The distinctive sweet and summery fl avour of Jersey Royal potatoes is given a kick by fi ery chilli and zesty lime. These will also go brilliantly with the salmon on p10.
You will need • 700g Jersey Royals • 1 red chilli, deseeded and chopped
• A knob of butter • 1 lime, grated zest and juice
Method: 1. Bring a pan of lightly salted water to the boil and cook the Jersey Royals for 15 minutes or until tender. Drain. 2. Heat the butter in a pan and quickly fry the chilli. 3. Pour over the Jersey Royals. 4. Sprinkle with the zest and juice of the lime.
