SERVES 8 Prep: 20 mins Cook:45 mins Sea salt is used to capture and seal in the natural juices of the fi sh and the fresh fl avours of the lemon and herbs.
You will need • Fresh Whole Salmon, approx 1.8kg, gutted and cleaned
• 1.8kg coarse sea salt • 4 large eggs, beaten • 1 lemon, thinly sliced • 1 medium bunch thyme leaves, roughly chopped
• 1 medium bunch basil leaves, roughly chopped
• 1 medium bunch sage leaves, roughly chopped
Method: 1. Preheat oven to 170°C. 2. Mix salt and eggs to form a grainy texture. 3.Place foil on large baking sheet and spread out half salt/egg mixture. 4.Place salmon on top. 5.Stuff cavity with lemon slices and herbs mixed together.6. Cover salmon with remaining salt/egg mixture and cook for 45 minutes. 7.Remove from oven and remove crust. 8.Discard stuffi ng and skin. Serve.
