COOK’N TELL SAUCY SHRIMP SKEWERS


* Marinade, Grilling/Dipping Sauce Ingredients


3/4 cup tequila 3/4 cup agave nectar 3 limes, juiced


1 tablespoon extra virgin olive oil Garlic, minced, approx. 2 teaspoons Fresh mint leaves, minced, approx. 2 tablespoons Ground black pepper and salt — to taste


* Marinade, Grilling/Dipping Sauce (next column)


— Combine all ingredients in a bowl and mix well. If time allows, cover and let stand to enhance flavor.


Marinate all skewer ingredients in grilling sauce, saving a portion of sauce for dipping. If using wooden skewers, soak skewers in water for half an hour, to prevent burning. Preheat grill. Load skewers with marinated ingredients, and place on grill. Turn skewers after 1-2 minutes, depending on heat of grill. Continue brushing skewers with sauce, and cook until shrimp are done. — Bon App´etit

2 -3 shrimp per skewer, peels removed and tails left on Cantaloupe slices Jicama, cut into thick chunks Red and green jalapeño peppers, as many as you dare Red onion wedges Bell pepper slices, red and yellow Fresh mint for garnish
